Spicy Devilled Mushrooms on Toast
Ingredients
- 1250 g mushrooms(250g)
- 23 tablespoon plain flour(24g)
- 31 teaspoon cayenne pepper(2g)
- 40.5 teaspoon English mustard powder(2g)
- 50.5 teaspoon salt(3g)
- 60.5 teaspoon black pepper(1g)
- 720 g butter(20g)
- 8100 ml vegetable stock(100g)
- 980 ml cream(80g)
- 101 teaspoon Worcestershire sauce(5g)
- 110.5 teaspoon Tabasco(2g)
- 122 slice toast(60g)
Instructions
- 1Slice the mushrooms.
- 2In a bowl, mix the plain flour, cayenne pepper, English mustard powder, salt, and black pepper to make seasoned flour.
- 3Toss the sliced mushrooms thoroughly in the seasoned flour to coat.
- 4Heat the butter in a large frying pan over medium heat.
- 5Add the coated mushrooms to the pan, leaving behind any excess flour.
- 6Fry the mushrooms for 3-5 minutes, scraping often.
- 7Add the vegetable stock and mix well. Let the mixture come to a bubble.
- 8Add the cream and stir. Check the seasoning and adjust salt and pepper if needed.
- 9Add Worcestershire sauce and Tabasco to taste.
- 10Toast the bread slices.
- 11Pile the spicy devilled mushrooms onto the toast and serve immediately.
