Ingredients

  • 1250 g mushrooms(250g)
  • 23 tablespoon plain flour(24g)
  • 31 teaspoon cayenne pepper(2g)
  • 40.5 teaspoon English mustard powder(2g)
  • 50.5 teaspoon salt(3g)
  • 60.5 teaspoon black pepper(1g)
  • 720 g butter(20g)
  • 8100 ml vegetable stock(100g)
  • 980 ml cream(80g)
  • 101 teaspoon Worcestershire sauce(5g)
  • 110.5 teaspoon Tabasco(2g)
  • 122 slice toast(60g)

Instructions

  1. 1Slice the mushrooms.
  2. 2In a bowl, mix the plain flour, cayenne pepper, English mustard powder, salt, and black pepper to make seasoned flour.
  3. 3Toss the sliced mushrooms thoroughly in the seasoned flour to coat.
  4. 4Heat the butter in a large frying pan over medium heat.
  5. 5Add the coated mushrooms to the pan, leaving behind any excess flour.
  6. 6Fry the mushrooms for 3-5 minutes, scraping often.
  7. 7Add the vegetable stock and mix well. Let the mixture come to a bubble.
  8. 8Add the cream and stir. Check the seasoning and adjust salt and pepper if needed.
  9. 9Add Worcestershire sauce and Tabasco to taste.
  10. 10Toast the bread slices.
  11. 11Pile the spicy devilled mushrooms onto the toast and serve immediately.
