Microwave Protein Cheesecake
Ingredients
- 1150 g smooth ricotta or Greek yogurt(150g)
- 250 g cream cheese(50g)
- 31 egg(50g)
- 41 tablespoon instant pudding mix or sweetener(12g)
- 52 tablespoon extra yogurt(30g)
- 61 tablespoon almond butter(16g)
Instructions
- 1In a microwave-safe bowl, combine the ricotta or Greek yogurt and cream cheese with the egg.
- 2Fold in the instant pudding mix or sweetener.
- 3Microwave for 1 minute. Stir, then microwave again for another minute.
- 4Check the cheesecake. If needed, microwave for an additional 30-60 seconds until the edges are set and the center is slightly wobbly.
- 5Refrigerate until completely cool.
- 6Top with extra yogurt mixed with almond butter and enjoy.
