Ingredients

  • 1150 g smooth ricotta or Greek yogurt(150g)
  • 250 g cream cheese(50g)
  • 31 egg(50g)
  • 41 tablespoon instant pudding mix or sweetener(12g)
  • 52 tablespoon extra yogurt(30g)
  • 61 tablespoon almond butter(16g)

Instructions

  1. 1In a microwave-safe bowl, combine the ricotta or Greek yogurt and cream cheese with the egg.
  2. 2Fold in the instant pudding mix or sweetener.
  3. 3Microwave for 1 minute. Stir, then microwave again for another minute.
  4. 4Check the cheesecake. If needed, microwave for an additional 30-60 seconds until the edges are set and the center is slightly wobbly.
  5. 5Refrigerate until completely cool.
  6. 6Top with extra yogurt mixed with almond butter and enjoy.
