Ingredients

  • 12 sweet potatoes(400g)
  • 21 tablespoon olive oil(13.5g)
  • 31 cup chickpeas (cooked)(165g)
  • 42 cup spinach(60g)
  • 50.25 cup feta cheese(38g)
  • 60.5 teaspoon salt(3g)
  • 70.25 teaspoon black pepper(0.5g)

Instructions

  1. 1Preheat the oven to 200°C (400°F).
  2. 2Wash and pierce the sweet potatoes with a fork. Place them on a baking sheet and bake for 40-45 minutes until tender.
  3. 3While the sweet potatoes are baking, heat olive oil in a pan over medium heat.
  4. 4Add chickpeas and cook for 3-4 minutes until slightly crispy.
  5. 5Add spinach to the pan and cook until wilted, about 2 minutes.
  6. 6Season the chickpea and spinach mixture with salt and black pepper.
  7. 7Once the sweet potatoes are cooked, cut them open and fluff the insides with a fork.
  8. 8Top each sweet potato with the chickpea and spinach mixture.
  9. 9Sprinkle feta cheese over the top and serve warm.
