High Protein Sweet Potato Dinner
Ingredients
- 12 sweet potatoes(400g)
- 21 tablespoon olive oil(13.5g)
- 31 cup chickpeas (cooked)(165g)
- 42 cup spinach(60g)
- 50.25 cup feta cheese(38g)
- 60.5 teaspoon salt(3g)
- 70.25 teaspoon black pepper(0.5g)
Instructions
- 1Preheat the oven to 200°C (400°F).
- 2Wash and pierce the sweet potatoes with a fork. Place them on a baking sheet and bake for 40-45 minutes until tender.
- 3While the sweet potatoes are baking, heat olive oil in a pan over medium heat.
- 4Add chickpeas and cook for 3-4 minutes until slightly crispy.
- 5Add spinach to the pan and cook until wilted, about 2 minutes.
- 6Season the chickpea and spinach mixture with salt and black pepper.
- 7Once the sweet potatoes are cooked, cut them open and fluff the insides with a fork.
- 8Top each sweet potato with the chickpea and spinach mixture.
- 9Sprinkle feta cheese over the top and serve warm.
