Ingredients

  • 16 egg(330g)
  • 22 teaspoon salt(12g)
  • 31 teaspoon black pepper(2g)
  • 41 kg uncooked rice(1000g)
  • 5400 g chicken breast(400g)
  • 61 teaspoon chili flakes(2g)
  • 71 teaspoon garlic powder(3g)
  • 81 bunch spring onions(100g)
  • 9120 ml soy sauce(120g)
  • 1030 sprays cooking spray(10g)

Instructions

  1. 1Wash the rice thoroughly at least twice until the water runs clear.
  2. 2In a large pot, combine the rice with 1.3 liters of water and a pinch of salt. Bring to a boil, then reduce heat and simmer for 20 minutes without removing the lid. Let the rice cool completely, preferably overnight or quickly in the freezer.
  3. 3Crack the eggs into a bowl and whisk. In a non-stick pan, heat a little cooking spray and scramble the eggs, stirring until cooked through. Set aside.
  4. 4Cut the chicken into small pieces. Season with chili flakes, garlic powder, salt, and black pepper. In a pan with a little cooking spray, fry the chicken until golden brown and cooked through. Set aside.
  5. 5Cut the white part of the spring onions finely and the green part into larger pieces. Sauté the white part in a pan with a little cooking spray for a short time, then set aside.
  6. 6Divide the cooled rice into 6 portions. For each portion, heat a pan with about 5 sprays of cooking spray and fry the rice until slightly crispy.
  7. 7In a large bowl, combine the eggs, chicken, spring onions, and fried rice. Add the soy sauce and mix everything thoroughly.
  8. 8Divide the finished fried rice into 7 meal prep containers. Let cool and store in the refrigerator.
