Crispy Chicken Croquettes with Melty Cheese
Ingredients
- 1300 g Chicken breast(300g)
- 21 Potato(150g)
- 3200 g Scamorza cheese(200g)
- 450 g Grated cheese(50g)
- 51 teaspoon Salt(6g)
- 60.5 teaspoon Pepper(1g)
- 70.5 cup Flour(60g)
- 82 Eggs(100g)
- 91 cup Cornflakes(30g)
- 101 tablespoon Extra virgin olive oil(14g)
Instructions
- 1Boil the potato until tender, then peel and mash.
- 2Finely chop the chicken breast with a knife.
- 3In a bowl, combine the chopped chicken, mashed potato, grated cheese, salt, and pepper.
- 4Mix well and form small balls, placing a cube of scamorza cheese in the center of each.
- 5Roll each croquette in flour, then dip in beaten eggs, and finally coat with crushed cornflakes.
- 6Place the croquettes in an air fryer and spray with extra virgin olive oil.
- 7Cook at 190°C (375°F) for 15-20 minutes until golden and crispy.
- 8Serve hot while the cheese inside is still melty.
