Ingredients

  • 1300 g Chicken breast(300g)
  • 21 Potato(150g)
  • 3200 g Scamorza cheese(200g)
  • 450 g Grated cheese(50g)
  • 51 teaspoon Salt(6g)
  • 60.5 teaspoon Pepper(1g)
  • 70.5 cup Flour(60g)
  • 82 Eggs(100g)
  • 91 cup Cornflakes(30g)
  • 101 tablespoon Extra virgin olive oil(14g)

Instructions

  1. 1Boil the potato until tender, then peel and mash.
  2. 2Finely chop the chicken breast with a knife.
  3. 3In a bowl, combine the chopped chicken, mashed potato, grated cheese, salt, and pepper.
  4. 4Mix well and form small balls, placing a cube of scamorza cheese in the center of each.
  5. 5Roll each croquette in flour, then dip in beaten eggs, and finally coat with crushed cornflakes.
  6. 6Place the croquettes in an air fryer and spray with extra virgin olive oil.
  7. 7Cook at 190°C (375°F) for 15-20 minutes until golden and crispy.
  8. 8Serve hot while the cheese inside is still melty.
