High Protein Banana Bread Loaf
Ingredients
- 14 egg whites(120g)
- 20.25 teaspoon cream of tartar(1g)
- 31 ripe banana(120g)
- 42 tablespoon monk fruit sweetener(16g)
- 50.25 cup apple sauce(62g)
- 61 teaspoon vanilla extract(5g)
- 70.67 cup oat flour(67g)
- 80.33 cup protein powder(33g)
- 90.25 cup almond flour(24g)
- 100.5 teaspoon baking powder(2g)
- 110.5 teaspoon baking soda(2g)
- 120.5 teaspoon cinnamon(1.5g)
- 130.25 teaspoon sea salt(1.5g)
- 140.25 cup chocolate chips(45g)
Instructions
- 1Preheat oven to 180°C (350°F).
- 2Crack 4 egg whites into a bowl and add 1/4 teaspoon cream of tartar. Whisk until frothy.
- 3Mash the ripe banana in a separate bowl.
- 4Add monk fruit sweetener, apple sauce, and vanilla extract to the mashed banana. Mix well.
- 5In another bowl, combine oat flour, protein powder, almond flour, baking powder, baking soda, cinnamon, and sea salt.
- 6Add the dry ingredients to the wet mixture and mix until just combined.
- 7Fold in the whipped egg whites gently.
- 8Fold in chocolate chips.
- 9Pour the batter into a loaf pan lined with parchment paper.
- 10Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
- 11Let cool before slicing and serving.
