Ingredients

  • 14 egg whites(120g)
  • 20.25 teaspoon cream of tartar(1g)
  • 31 ripe banana(120g)
  • 42 tablespoon monk fruit sweetener(16g)
  • 50.25 cup apple sauce(62g)
  • 61 teaspoon vanilla extract(5g)
  • 70.67 cup oat flour(67g)
  • 80.33 cup protein powder(33g)
  • 90.25 cup almond flour(24g)
  • 100.5 teaspoon baking powder(2g)
  • 110.5 teaspoon baking soda(2g)
  • 120.5 teaspoon cinnamon(1.5g)
  • 130.25 teaspoon sea salt(1.5g)
  • 140.25 cup chocolate chips(45g)

Instructions

  1. 1Preheat oven to 180°C (350°F).
  2. 2Crack 4 egg whites into a bowl and add 1/4 teaspoon cream of tartar. Whisk until frothy.
  3. 3Mash the ripe banana in a separate bowl.
  4. 4Add monk fruit sweetener, apple sauce, and vanilla extract to the mashed banana. Mix well.
  5. 5In another bowl, combine oat flour, protein powder, almond flour, baking powder, baking soda, cinnamon, and sea salt.
  6. 6Add the dry ingredients to the wet mixture and mix until just combined.
  7. 7Fold in the whipped egg whites gently.
  8. 8Fold in chocolate chips.
  9. 9Pour the batter into a loaf pan lined with parchment paper.
  10. 10Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
