Quick Ichiran-Style Tonkotsu Ramen
Ingredients
- 1340 ml Water(340g)
- 25 pinch Garlic powder(1g)
- 330 g Pork belly slices(30g)
- 41 tablespoon Pork fat(12g)
- 52 tablespoon Japanese sake(30g)
- 61 tablespoon Pork stock powder(8g)
- 77 pinch MSG, IMP, GMP blend(2g)
- 81.5 teaspoon Gelatin powder(5g)
- 90.25 tablespoon Sugar(3g)
- 101.5 tablespoon Soy sauce(27g)
- 112 pinch Black pepper(0.5g)
- 122 teaspoon Soy milk(10g)
- 130.5 teaspoon Sesame oil(2g)
- 141 tablespoon Gochujang(18g)
- 150.5 teaspoon Red chili powder(1g)
- 161 pinch MSG(0.3g)
- 170.33 teaspoon Water (for spicy sauce)(1.5g)
- 18120 g Egg noodles(120g)
Instructions
- 1In a pot, combine 340ml water, garlic powder, pork belly slices, pork fat, Japanese sake, pork stock powder, MSG/IMP/GMP blend, and gelatin powder.
- 2Bring to a boil and simmer for 10 minutes.
- 3Blend the soup mixture with a handheld blender until creamy.
- 4Add sugar, soy sauce, black pepper, and soy milk to the blended soup. Blend again until smooth.
- 5In a small bowl, mix sesame oil, gochujang, red chili powder, MSG, and water to make the spicy sauce.
- 6Boil egg noodles according to package instructions and drain.
- 7To serve, place cooked noodles in a bowl, pour over the hot soup, and top with the spicy sauce. Add any desired toppings.
