2In a large skillet over medium heat, heat olive oil. Add ground beef and cook until browned (5–7 minutes). Drain excess fat.
3Stir in chopped onion and minced garlic; cook until softened.
4In the prepared baking dish, layer the ground beef mixture evenly across the bottom, followed by thinly sliced potatoes. Season with salt, pepper, Italian seasoning, and paprika if desired. Top with shredded cheddar and Parmesan cheeses.
5Pour beef broth around the edges of the casserole. Cover with aluminum foil and bake for 30 minutes.
6Remove foil and continue baking for an additional 15–20 minutes until potatoes are tender and cheese is bubbly.
