Instructions

  1. 1In a large bowl, whisk together the eggs, 1/3 cup Greek yogurt, and 1/2 teaspoon vanilla extract until well combined.
  2. 2Add the oat flour, baking powder, monkfruit sweetener, and a pinch of salt. Mix until just combined; do not overmix.
  3. 3Heat a nonstick skillet over low heat and add a little butter or oil.
  4. 4Pour portions of the batter onto the skillet to form pancakes. Cook for 2-3 minutes per side, covering the pan to help them rise.
  5. 5In a separate bowl, mix 1/2 cup Greek yogurt, cream cheese, 1.5 tablespoons brewed coffee, 1/2 teaspoon vanilla extract, and monkfruit or stevia to taste until smooth.
  6. 6Dip each pancake in brewed coffee for 7-10 seconds.
  7. 7Layer the pancakes with the cream mixture between each pancake.
  8. 8Dust the top with cocoa powder.
  9. 9Drizzle with maple syrup if desired. Serve immediately.
