1In a large bowl, whisk together the eggs, 1/3 cup Greek yogurt, and 1/2 teaspoon vanilla extract until well combined.

4Pour portions of the batter onto the skillet to form pancakes. Cook for 2-3 minutes per side, covering the pan to help them rise.
5In a separate bowl, mix 1/2 cup Greek yogurt, cream cheese, 1.5 tablespoons brewed coffee, 1/2 teaspoon vanilla extract, and monkfruit or stevia to taste until smooth.
6Dip each pancake in brewed coffee for 7-10 seconds.
7Layer the pancakes with the cream mixture between each pancake.
8Dust the top with cocoa powder.
9Drizzle with maple syrup if desired. Serve immediately.
