Ingredients

  • 11 lb ground pork(454g)
  • 22 green onion(30g)
  • 31 tablespoon ginger(6g)
  • 42 tablespoon soy sauce(30g)
  • 51 tablespoon sesame oil(13g)
  • 61 teaspoon sugar(4g)
  • 71 teaspoon salt(5g)
  • 80.5 teaspoon white pepper(1g)
  • 91 cup chicken broth(240g)
  • 102 tablespoon unflavored gelatin(14g)
  • 112 cup all-purpose flour(240g)
  • 120.75 cup water(180g)

Instructions

  1. 1Mix ground pork, green onion, ginger, soy sauce, sesame oil, sugar, salt, and white pepper in a bowl until well combined.
  2. 2Heat chicken broth in a saucepan until hot but not boiling. Sprinkle unflavored gelatin over the broth and stir until dissolved. Pour into a shallow dish and refrigerate until set.
  3. 3Once the gelatin is set, cut it into small cubes and mix into the pork filling.
  4. 4In a separate bowl, combine all-purpose flour and water to form a dough. Knead until smooth, then cover and let rest for 30 minutes.
  5. 5Roll the dough into a log and cut into small pieces. Roll each piece into a thin circle.
  6. 6Place a spoonful of filling in the center of each dough circle. Fold and pleat the edges to seal the dumpling.
  7. 7Place dumplings in a steamer lined with parchment paper or cabbage leaves. Steam over boiling water for 8-10 minutes until cooked through.
  8. 8Serve hot with soy sauce or vinegar.
