1Mix ground pork, green onion, ginger, soy sauce, sesame oil, sugar, salt, and white pepper in a bowl until well combined.
2Heat chicken broth in a saucepan until hot but not boiling. Sprinkle unflavored gelatin over the broth and stir until dissolved. Pour into a shallow dish and refrigerate until set.
3Once the gelatin is set, cut it into small cubes and mix into the pork filling.
4In a separate bowl, combine all-purpose flour and water to form a dough. Knead until smooth, then cover and let rest for 30 minutes.
5Roll the dough into a log and cut into small pieces. Roll each piece into a thin circle.
6Place a spoonful of filling in the center of each dough circle. Fold and pleat the edges to seal the dumpling.
7Place dumplings in a steamer lined with parchment paper or cabbage leaves. Steam over boiling water for 8-10 minutes until cooked through.
