Ingredients

  • 10.5 gallon whole milk(1900g)
  • 20.5 cup white vinegar(120g)
  • 31 teaspoon salt(5g)

Instructions

  1. 1Add the milk to a large pot and slowly heat it to 120°F (49°C), stirring occasionally to prevent burning.
  2. 2Remove the pot from heat, add the vinegar, and stir for about 30 seconds until curds form and separate from the whey.
  3. 3Cover the pot and let it rest for 15 minutes.
  4. 4Remove the curds and squeeze out as much liquid as possible. Mix in salt if using.
  5. 5Place the curds in a bowl and microwave for 30 seconds. Stretch and fold the cheese a few times until it is smooth and stretchy.
  6. 6Form the cheese into a ball and transfer it to an ice bath for 15 minutes to firm up.
