Fresh Homemade Mozzarella Cheese
Ingredients
- 10.5 gallon whole milk(1900g)
- 20.5 cup white vinegar(120g)
- 31 teaspoon salt(5g)
Instructions
- 1Add the milk to a large pot and slowly heat it to 120°F (49°C), stirring occasionally to prevent burning.
- 2Remove the pot from heat, add the vinegar, and stir for about 30 seconds until curds form and separate from the whey.
- 3Cover the pot and let it rest for 15 minutes.
- 4Remove the curds and squeeze out as much liquid as possible. Mix in salt if using.
- 5Place the curds in a bowl and microwave for 30 seconds. Stretch and fold the cheese a few times until it is smooth and stretchy.
- 6Form the cheese into a ball and transfer it to an ice bath for 15 minutes to firm up.
