Instructions
- 1Finely chop the onions and garlic cloves.
- 2Heat 2 tablespoons of vegetable oil in a skillet over medium heat. Add onions and cook until softened.
- 3Add ground beef and cook until browned.
- 4Stir in tomato paste, taco seasoning, smoked paprika, garlic powder, onion powder, oregano, chilli flakes, cayenne pepper, and corn starch. Mix well.
- 5Add chipotle paste and water. Season with salt and pepper. Simmer until the mixture thickens.
- 6In a separate pan, heat remaining vegetable oil over medium-high heat.
- 7Fill each flour tortilla with the beef mixture and mozzarella cheese. Fold in half.
- 8Fry the filled tortillas in oil until golden and crispy on both sides. Drain on paper towels.
- 9For the sauce, mix mayonnaise, ketchup, honey mustard, chipotle paste, BBQ sauce, and lemon juice in a bowl.
- 10For the fresh salsa, dice tomatoes and onion, chop cilantro, and combine with rice vinegar, lime juice, salt, and pepper.
- 11Serve crispy beef tacos with sauce and fresh salsa.
