Ingredients
- 12 cup peeled beans(400g)
- 22 onion(200g)
- 31 red pepper(50g)
- 40.5 bell pepper(60g)
- 51 teaspoon salt(5g)
- 62 cup vegetable oil(480g)
- 70.25 cup water(60g)
Instructions
- 1Remove the skin from the beans and rinse thoroughly.
- 2Add beans, 1 onion, red pepper, and bell pepper (if using) to a blender.
- 3Add a small amount of water and blend until smooth.
- 4Transfer the mixture to a bowl and whisk vigorously to incorporate air and make the batter fluffy.
- 5Add the remaining onion (chopped) and salt to the batter. Mix well.
- 6Heat vegetable oil in a deep pan over medium-low heat.
- 7Scoop spoonfuls of the batter into the hot oil. The batter should float if enough air is incorporated.
- 8Fry until golden brown on all sides, turning as needed.
- 9Remove the akara from the oil and drain on paper towels.
- 10Serve hot, optionally with pap or bread.
