1Season & Sear Chicken – Season with salt, pepper, garlic powder, onion powder, and smoked paprika. Sear in olive oil 4–5 min per side until golden. Set aside.
2Sauté Aromatics – In the same skillet, melt butter, cook onion 2–3 min, then add garlic for 30 sec.
3Make Sauce – Add chicken broth, scrape up bits, then stir in cream, thyme, parsley, and paprika. Simmer. Lower heat, add cheddar and mozzarella, stir until smooth.
4Cook Rice – In a pot, cook rice with chicken broth, salt, and pepper. Simmer 15 min until tender. Fluff with a fork.
5Smother Chicken – Return chicken to skillet, simmer in sauce 10–12 min until cooked through. Spoon sauce over chicken.
6Serve – Plate rice, top with chicken and sauce. Garnish with parsley or extra cheese.
