Garlic Fried Plantains (Fritos Verdes al Ajillo)
Ingredients
- 13 green plantains(900g)
- 22 cup vegetable oil(480g)
- 32 tablespoon olive oil(27g)
- 45 garlic cloves(15g)
- 52 tablespoon parsley or cilantro(8g)
Instructions
- 1Peel the green plantains by making slits along the skin and removing it with your hands.
- 2Cut the plantains into small pieces.
- 3Heat enough vegetable oil in a pot.
- 4Once the oil is hot, add the plantain pieces and fry briefly for a few minutes.
- 5Remove the plantains from the oil and flatten them using a flat object.
- 6Return the flattened plantains to the hot oil and fry until crispy and golden.
- 7Transfer the fried plantains to a large skillet.
- 8Add olive oil to the skillet along with finely chopped garlic.
- 9Add chopped parsley or cilantro to taste.
- 10Add the fried plantains and quickly toss them with the garlic and herbs.
- 11Serve hot.
