Ingredients

  • 13 green plantains(900g)
  • 22 cup vegetable oil(480g)
  • 32 tablespoon olive oil(27g)
  • 45 garlic cloves(15g)
  • 52 tablespoon parsley or cilantro(8g)

Instructions

  1. 1Peel the green plantains by making slits along the skin and removing it with your hands.
  2. 2Cut the plantains into small pieces.
  3. 3Heat enough vegetable oil in a pot.
  4. 4Once the oil is hot, add the plantain pieces and fry briefly for a few minutes.
  5. 5Remove the plantains from the oil and flatten them using a flat object.
  6. 6Return the flattened plantains to the hot oil and fry until crispy and golden.
  7. 7Transfer the fried plantains to a large skillet.
  8. 8Add olive oil to the skillet along with finely chopped garlic.
  9. 9Add chopped parsley or cilantro to taste.
  10. 10Add the fried plantains and quickly toss them with the garlic and herbs.
  11. 11Serve hot.
