Ingredients

  • 12 onion(300g)
  • 22 tablespoon olive oil(27g)
  • 3250 g pasta(250g)
  • 40.5 cup heavy cream(120g)
  • 51 tablespoon chili oil(14g)
  • 61 teaspoon salt(6g)
  • 70.5 teaspoon black pepper(1g)

Instructions

  1. 1Slice the onions thinly.
  2. 2Heat olive oil in a large skillet over medium heat.
  3. 3Add onions and cook slowly, stirring often, until deeply caramelized and golden brown, about 20-30 minutes.
  4. 4Meanwhile, cook pasta in salted boiling water according to package instructions. Drain and reserve some pasta water.
  5. 5Add heavy cream to the caramelized onions and stir to combine. Simmer for 2-3 minutes.
  6. 6Add cooked pasta to the skillet and toss to coat. Add reserved pasta water as needed for a silky sauce.
  7. 7Season with salt and black pepper.
