Ingredients

  • 14 egg(200g)
  • 2100 g oat flour(100g)
  • 3220 g milk or plant based milk(220g)
  • 415 g cocoa powder (for crepes)(15g)
  • 5300 g heavy cream(300g)
  • 615 g cocoa powder (for filling)(15g)
  • 720 g sweetener of choice (optional)(20g)
  • 8200 g dark chocolate(200g)
  • 960 g crushed almonds(60g)

Instructions

  1. 1Mix the eggs with milk, oat flour, and cocoa powder until smooth.
  2. 2Heat a non-stick pan over medium heat and pour a thin layer of batter to form a crepe. Cook until set, then flip and cook the other side. Repeat with remaining batter.
  3. 3Trim the edges of the crepes to make them even.
  4. 4Whip the heavy cream with cocoa powder and sweetener (if using) until stiff peaks form.
  5. 5Spread the whipped cream filling in layers over the crepes.
  6. 6Roll the stacked crepes tightly to form a log shape.
  7. 7Melt the dark chocolate and mix with crushed almonds.
  8. 8Cover the log with the chocolate-almond mixture.
  9. 9Refrigerate until the chocolate coating is set. Slice and serve.
