Crockpot Southern 15 Bean Soup with Smoked Turkey

- 120 oz 15 bean soup mix (with seasoning packet)(567g)
- 22 smoked turkey drumsticks(600g)
- 31 bunch fresh collard greens(300g)
- 41 large onion(200g)
- 51 green bell pepper(120g)
- 62 rib celery(80g)
- 74 clove garlic(12g)
- 88 cup chicken broth(1920g)
- 91 tablespoon onion powder(8g)
- 101 tablespoon garlic powder(8g)
- 111 tablespoon smoked paprika(7g)
- 121 tablespoon black pepper(7g)
- 132 tablespoon apple cider vinegar(30g)
- 141 tablespoon hot sauce(15g)
- 151 stick butter(113g)
Instructions
- 1Rinse and sort the beans, removing any debris.
- 2Add the beans to the crockpot.
- 3Add smoked turkey drumsticks, chopped collard greens, diced onion, diced green bell pepper, diced celery, and minced garlic to the crockpot.
- 4Sprinkle in the seasoning packet from the bean mix.
- 5Add onion powder, garlic powder, smoked paprika, and black pepper.
- 6Pour in chicken broth and apple cider vinegar.
- 7Add the stick of butter.
- 8Cover and cook on high for 6–8 hours, until beans are tender.
- 9Remove turkey drumsticks, shred the meat, discard bones, and return the meat to the pot.
- 10Add hot sauce to taste and stir well.
- 11Serve warm, optionally with cornbread.
