Ingredients

  • 1300 g Frozen peas(300g)
  • 21 Garlic clove(5g)
  • 32 tablespoon Nutritional yeast(16g)
  • 42 tablespoon Fresh parsley(8g)
  • 52 tablespoon Fresh mint(8g)
  • 60.5 teaspoon Salt(3g)
  • 70.25 teaspoon Black pepper(1g)
  • 80.5 cup White flour(60g)
  • 90.25 cup Water(60g)
  • 1020 g Ghee(20g)
  • 110.25 cup Yoghurt(60g)
  • 121 tablespoon Lemon juice(15g)
  • 131 tablespoon Mint (for dipping)(4g)
  • 141 tablespoon Parsley (for dipping)(4g)
  • 150.25 teaspoon Salt (for dipping)(1g)

Instructions

  1. 1Cook the frozen peas according to package instructions and drain.
  2. 2Blend or mash half of the peas with the garlic clove, nutritional yeast, and water until mostly smooth.
  3. 3Add the remaining peas, chopped parsley, chopped mint, white flour, salt, and pepper. Mix until combined.
  4. 4Shape the mixture into small patties.
  5. 5Heat ghee in a pan over medium heat. Fry the patties until crispy and golden on both sides, about 3-4 minutes per side. Alternatively, bake at 200°C (400°F) for 15-20 minutes, flipping halfway.
  6. 6For the dipping sauce, mix yoghurt, lemon juice, chopped mint, chopped parsley, and salt in a bowl.
  7. 7Serve the fritters hot with the yoghurt dipping sauce.
