Ingredients

  • 1500 g frozen french fries(500g)
  • 215 ml vegetable oil(14g)
  • 35 g garlic powder(5g)
  • 43 g onion powder(3g)
  • 52 g sea salt(2g)
  • 6400 g flank steak, very thinly sliced(400g)
  • 7120 ml Korean BBQ sauce (bulgogi marinade)(120g)
  • 815 g brown sugar(15g)
  • 915 ml soy sauce(15g)
  • 1010 g garlic, minced(10g)
  • 115 g fresh ginger, grated(5g)
  • 125 ml toasted sesame oil(5g)
  • 1360 ml spicy mayo drizzle (mayonnaise mixed with sriracha)(60g)
  • 1410 g green onions, thinly sliced(10g)
  • 153 g toasted sesame seeds(3g)
  • 1615 g shredded carrots or kimchi (optional)(15g)

Instructions

  1. 1Preheat your oven or air fryer to 200°C (400°F).
  2. 2Toss the frozen french fries with vegetable oil, garlic powder, onion powder, and sea salt.
  3. 3Bake or air fry the fries for 18-20 minutes until they are extra golden and crispy.
  4. 4While the fries are cooking, whisk together the Korean BBQ sauce, brown sugar, soy sauce, minced garlic, grated ginger, and sesame oil in a small bowl.
  5. 5Heat a large skillet or wok over high heat and add a splash of oil.
  6. 6Add the thinly sliced beef to the hot skillet in a single layer and sear for 2 minutes until browned.
  7. 7Pour the prepared sauce mixture over the beef and stir well to combine.
  8. 8Simmer the beef for 2-3 minutes on medium heat until the sauce reduces into a thick, sticky glaze.
  9. 9Arrange the hot, crispy fries on a serving platter and layer the sticky Korean BBQ beef generously over the top.
