Ingredients

  • 11 lb baby potatoes(454g)
  • 22 tablespoon olive oil(27g)
  • 31 bunch chives, finely chopped(15g)
  • 41.25 cup shredded parmesan cheese(125g)
  • 51 teaspoon kosher salt(6g)
  • 61 teaspoon ground black pepper(2g)
  • 71 teaspoon crushed red pepper flakes(2g)
  • 81 teaspoon garlic powder(3g)

Instructions

  1. 1Preheat oven to 400°F (200°C).
  2. 2Bring a large pot of salted water to a boil.
  3. 3Add baby potatoes and boil until fork tender, about 20 minutes.
  4. 4Drain potatoes, rinse with cold water, and set aside to cool.
  5. 5Drizzle two baking sheets with 2 tablespoons olive oil.
  6. 6Add potatoes to the baking sheets and toss in the olive oil.
  7. 7Using the palm of your hand or a cup, smash each potato down.
  8. 8Drizzle the tops with more olive oil if desired.
  9. 9Sprinkle potatoes with kosher salt, black pepper, red pepper flakes, and garlic powder.
  10. 10Bake for 25 to 30 minutes, flipping once, until skins are browned and crispy.
  11. 11Remove from oven, sprinkle with shredded parmesan cheese, and roast for another 2-3 minutes until cheese melts.
  12. 12Sprinkle with chopped chives and flaky salt if desired.
  13. 13Serve hot, alone or with Jalapeno Chive Dipping Sauce.
