Crispy Parmesan Chive Smashed Potatoes
Ingredients
- 11 lb baby potatoes(454g)
- 22 tablespoon olive oil(27g)
- 31 bunch chives, finely chopped(15g)
- 41.25 cup shredded parmesan cheese(125g)
- 51 teaspoon kosher salt(6g)
- 61 teaspoon ground black pepper(2g)
- 71 teaspoon crushed red pepper flakes(2g)
- 81 teaspoon garlic powder(3g)
Instructions
- 1Preheat oven to 400°F (200°C).
- 2Bring a large pot of salted water to a boil.
- 3Add baby potatoes and boil until fork tender, about 20 minutes.
- 4Drain potatoes, rinse with cold water, and set aside to cool.
- 5Drizzle two baking sheets with 2 tablespoons olive oil.
- 6Add potatoes to the baking sheets and toss in the olive oil.
- 7Using the palm of your hand or a cup, smash each potato down.
- 8Drizzle the tops with more olive oil if desired.
- 9Sprinkle potatoes with kosher salt, black pepper, red pepper flakes, and garlic powder.
- 10Bake for 25 to 30 minutes, flipping once, until skins are browned and crispy.
- 11Remove from oven, sprinkle with shredded parmesan cheese, and roast for another 2-3 minutes until cheese melts.
- 12Sprinkle with chopped chives and flaky salt if desired.
- 13Serve hot, alone or with Jalapeno Chive Dipping Sauce.
