Instructions
1In a large bowl, whisk together the heavy cream, whole eggs, egg yolks, vanilla paste, cinnamon powder, and salt until smooth.
2Heat a large skillet or griddle over medium heat and add plenty of butter.
3Dip each slice of day-old brioche or milk bread into the custard mixture for about 20 seconds per side, ensuring it is well soaked but not falling apart.
4Place the soaked bread slices onto the hot skillet and sear until golden brown on one side.
5Sprinkle brown sugar on the top of each slice, then flip and sear for another 30 seconds to caramelize the sugar.
6Serve immediately, optionally topped with fresh berries and syrup.
