Salvadoran Refried Beans (Frijoles Licuados)
Ingredients
- 12 cup Red beans(400g)
- 26 cup Water(1420g)
- 30.5 Onion(60g)
- 42 Garlic clove(10g)
- 51 teaspoon Salt(6g)
- 62 tablespoon Vegetable oil(28g)
Instructions
- 1Rinse the red beans and place them in a large pot with water.
- 2Add the onion and garlic cloves to the pot.
- 3Bring to a boil, then reduce heat and simmer until beans are tender, about 1.5 to 2 hours.
- 4Remove the onion and garlic. Drain the beans, reserving some of the cooking liquid.
- 5Blend the beans with a portion of the reserved liquid until smooth.
- 6Heat vegetable oil in a skillet over medium heat.
- 7Pour the blended beans into the skillet, add salt, and cook, stirring frequently, until thickened to desired consistency.
- 8Serve hot as a side dish or with tortillas.
