Mexican Style Pizza (Taco Bell Inspired)
Ingredients
- 112 fajita-size flour tortillas(720g)
- 20.5 cup vegetable oil (for frying)(120g)
- 31.5 cup red enchilada sauce(375g)
- 42 cup refried beans(520g)
- 51.5 lb cooked ground beef(680g)
- 61 packet taco seasoning(28g)
- 73 cup shredded taco cheese blend(340g)
- 80.75 cup sour cream(180g)
Instructions
- 1Preheat oven to 350°F (175°C).
- 2Heat vegetable oil in a skillet over medium heat. Lightly fry each tortilla until slightly puffed and golden but still soft. Drain on paper towels.
- 3Place 6 fried tortillas on a sheet pan.
- 4Spread 1 tablespoon of enchilada sauce on each tortilla.
- 5Spoon a generous amount of refried beans over the sauce and spread evenly.
- 6Add a layer of cooked ground beef over the beans.
- 7Sprinkle taco seasoning over the beef.
- 8Add a generous handful of shredded taco cheese blend on top.
- 9Top each with another fried tortilla.
- 10Spread another tablespoon of enchilada sauce on top of each stack.
- 11Sprinkle remaining cheese evenly over the tops.
- 12Bake in the preheated oven for 15-20 minutes, until cheese is melted and bubbly.
- 13Remove from oven and let cool slightly.
- 14Top each pizza with a dollop of sour cream before serving. Add optional toppings like pico de gallo or cilantro if desired.
