Ingredients
- 12 cucumber (with skin)(500g)
- 24 g mint leaves(4g)
- 31 pinch salt(1g)
- 4400 ml cold water(400g)
- 53 g agar agar(3g)
Instructions
- 1Blend the cucumbers (with skin), mint leaves, and cold water until smooth.
- 2Strain the mixture as finely as possible to obtain clear juice.
- 3Add a pinch of salt and agar agar to the juice.
- 4Bring the mixture to a boil, stirring to dissolve the agar agar.
- 5Pour into a container and refrigerate for about 20 minutes until set.
- 6Cut the gel into pieces and blend again until smooth. Add a little water if too thick.
- 7Serve with the crispy squid ink snack.
