Ingredients

  • 12 cucumber (with skin)(500g)
  • 24 g mint leaves(4g)
  • 31 pinch salt(1g)
  • 4400 ml cold water(400g)
  • 53 g agar agar(3g)

Instructions

  1. 1Blend the cucumbers (with skin), mint leaves, and cold water until smooth.
  2. 2Strain the mixture as finely as possible to obtain clear juice.
  3. 3Add a pinch of salt and agar agar to the juice.
  4. 4Bring the mixture to a boil, stirring to dissolve the agar agar.
  5. 5Pour into a container and refrigerate for about 20 minutes until set.
  6. 6Cut the gel into pieces and blend again until smooth. Add a little water if too thick.
  7. 7Serve with the crispy squid ink snack.
