Instructions
1Cook Barbacoa Beef: Place beef, onion, chipotles, vinegar, lime juice, garlic, cumin, oregano, salt, pepper, cloves, broth, and bay leaves in a slow cooker. Mix well. Cook on LOW for 8–9 hours or HIGH for 4–5 hours until beef shreds easily. Discard bay leaves, shred beef with two forks, return to juices, and keep warm.
2Make Cilantro-Lime Rice: Rinse rice, then combine with water, olive oil, and salt in a pot. Bring to boil, cover, and reduce heat to low for 15 min or until liquid is absorbed. Remove from heat, let steam for 5 min, then fluff with a fork. Stir in lime zest, juice, and cilantro.
3Make Guacamole: Mash avocados in a bowl with lime juice, salt, and pepper. Fold in tomato, onion, and cilantro. Taste and adjust seasoning.
4Serve: Plate a scoop of cilantro-lime rice, a generous portion of barbacoa beef, and fresh guacamole on the side. Garnish with extra cilantro or lime wedges.
