Ingredients

  • 14 clove garlic(12g)
  • 23 scallion(45g)
  • 3200 g pork belly(200g)
  • 41 tablespoon dark soy sauce(16g)
  • 51 tablespoon light soy sauce(16g)
  • 61 tablespoon oyster sauce(18g)
  • 71 teaspoon sesame oil(4g)
  • 81 teaspoon sugar(4g)
  • 90.25 teaspoon white pepper(0.5g)
  • 103 cup cooked rice(480g)
  • 112 tablespoon crispy onions (optional)(10g)

Instructions

  1. 1Mince the garlic and thinly slice the scallions, separating the whites and greens.
  2. 2In a bowl, combine dark soy sauce, light soy sauce, oyster sauce, sesame oil, sugar, and white pepper. Mix thoroughly to make the sauce.
  3. 3Place the pork belly in a dry pan and cook over medium heat for about 5 minutes until crispy and the fat is rendered.
  4. 4Remove the pork belly from the pan, leaving the rendered fat.
  5. 5Add the minced garlic and scallion whites to the pan and cook until fragrant.
  6. 6Return the pork belly to the pan.
  7. 7Add the cooked rice and the prepared sauce. Toss everything together until the sauce is well combined with the rice.
  8. 8Add the scallion greens and toss one last time.
  9. 9Transfer the fried rice to a bowl. Optionally, garnish with crispy onions and extra scallions.
