Ingredients

  • 11 whole Chicken(1200g)
  • 26 cloves Shallots(60g)
  • 34 cloves Garlic(16g)
  • 41 teaspoon Coriander powder(2g)
  • 51 teaspoon Turmeric powder(2g)
  • 61 teaspoon Salt(5g)
  • 71 teaspoon Sugar(4g)
  • 83 tablespoons Sweet soy sauce(45g)
  • 92 tablespoons Cooking oil(28g)
  • 10300 ml Water(300g)

Instructions

  1. 1Clean and cut the chicken into serving pieces.
  2. 2Blend shallots, garlic, coriander powder, turmeric powder, salt, and sugar into a smooth paste.
  3. 3Heat cooking oil in a pan, then sauté the spice paste until fragrant.
  4. 4Add the chicken pieces and stir until coated with the spices.
  5. 5Pour in water and cook until the chicken is tender and the liquid is reduced.
  6. 6Add sweet soy sauce and mix well.
  7. 7Remove the chicken from the pan and grill over charcoal or in the oven until browned and slightly charred.
  8. 8Brush with remaining sauce while grilling for extra flavor.
