Ingredients
- 11 large ciabatta loaf or baguette(300g)
- 230 g unsalted butter, softened(30g)
- 315 ml olive oil(13g)
- 41 large yellow onion, thinly sliced(120g)
- 5450 g ribeye or flank steak(450g)
- 660 g mayonnaise(60g)
- 715 g Dijon mustard(15g)
- 82 cloves garlic, finely minced(6g)
- 94 g fine sea salt(4g)
- 102 g ground black pepper(2g)
- 114 slices provolone cheese(80g)
- 1250 g fresh wild arugula(50g)
- 131 medium medium tomato, thinly sliced(80g)
Instructions
- 1Whisk mayonnaise, Dijon mustard, and garlic in a bowl to make aioli.
- 2Pat steak dry, season with salt and pepper.
- 3Heat olive oil in skillet, sear steak 3-4 minutes per side for medium-rare, rest 5 minutes.
- 4Melt butter in skillet, sauté onions 8-10 minutes until caramelized.
- 5Toast bread with remaining butter until golden.
- 6Slice steak against the grain into strips.
- 7Spread aioli on bread.
- 8Layer steak, onions, provolone cheese, tomato, and arugula on bread.
- 9Close sandwich, cut in half, serve immediately.
