Ingredients

  • 1500 g red cabbage(500g)
  • 22 firm ripe pears(300g)
  • 360 g shelled walnuts(60g)
  • 41 orange (untreated)(200g)
  • 52 teaspoon mustard(10g)
  • 61 teaspoon agave syrup(7g)
  • 70.5 teaspoon black pepper(1g)
  • 83 tablespoon extra virgin olive oil(40g)
  • 91.5 tablespoon balsamic vinegar(23g)
  • 101 teaspoon salt(6g)
  • 112 tablespoon wild fennel(4g)

Instructions

  1. 1Wash and thinly slice the red cabbage.
  2. 2Place the cabbage in a large bowl, add a pinch of salt and 1 tablespoon of orange juice, and massage for a few minutes until slightly softened but still crunchy.
  3. 3Peel and core the pears, cut them into small cubes, and add them to the cabbage.
  4. 4Toast the walnuts lightly, break them into pieces, and add to the bowl.
  5. 5In a separate bowl, mix together the olive oil, balsamic vinegar, agave syrup, mustard, grated orange zest, black pepper, and a pinch of salt to make the dressing.
  6. 6Pour the dressing over the salad and mix well.
  7. 7Let the salad rest for 10 minutes to allow the flavors to meld.
