Ingredients

  • 11 lb salmon fillets(450g)
  • 21 cup all-purpose flour(120g)
  • 32 tablespoon lemon pepper seasoning(14g)
  • 41 teaspoon salt(6g)
  • 52 eggs(100g)
  • 62 cup vegetable oil(440g)

Instructions

  1. 1Cut the salmon fillets into long, thin strips resembling fish sticks.
  2. 2In a shallow dish, combine the flour, lemon pepper seasoning, and salt.
  3. 3Dip each salmon strip into the beaten eggs, ensuring it is fully coated.
  4. 4Roll the egg-coated salmon strip in the seasoned flour mixture, pressing gently to adhere. Repeat with the remaining salmon strips.
  5. 5Heat vegetable oil in a deep pan or skillet over medium-high heat. The oil should be about 2 inches deep.
  6. 6Carefully add the coated salmon strips to the hot oil, working in batches to avoid overcrowding the pan. Fry for about 3-4 minutes or until golden brown and crispy. Flip the sticks halfway through cooking to ensure even browning.
  7. 7Once cooked, transfer the fried salmon sticks to a paper towel-lined plate to drain excess oil.
  8. 8Serve hot with Old Bay Blue Cheese Sauce.
