French-Style Banana Chocolate Cake

- 12 banana(240g)
- 22 egg yolk(34g)
- 32 tablespoon cocoa powder(12g)
- 41 teaspoon vanilla extract(4g)
- 53 tablespoon all-purpose flour(24g)
- 62 egg white(66g)
- 70.25 teaspoon salt(1.5g)
- 81 teaspoon lemon juice(5g)
- 90.25 cup dark chocolate chips(45g)
Instructions
- 1Preheat the oven to 180°C (350°F).
- 2Mash the bananas in a bowl until smooth.
- 3Mix in the egg yolks until well combined.
- 4Sift in the cocoa powder and whisk to combine.
- 5Add the vanilla extract and mix.
- 6Sift in the flour and mix again until just combined.
- 7In a separate bowl, season the egg whites with salt and add lemon juice.
- 8Whisk the egg whites until they become glossy and form soft peaks.
- 9Gently fold the whipped egg whites into the banana batter.
- 10Sprinkle in the dark chocolate chips and fold gently.
- 11Pour the batter into a lined or greased cake pan.
- 12Bake for about 25 minutes or until a toothpick inserted in the center comes out clean.
- 13Let the cake cool before serving.
