Dominican Arepa (Corn Cake)
Ingredients
- 11 cup milk(240g)
- 22 clove(2g)
- 31 cinnamon stick(5g)
- 42 can evaporated milk(710g)
- 51 can coconut milk(400g)
- 61 bar butter(113g)
- 71 teaspoon vanilla extract(5g)
- 80.5 cup brown sugar(100g)
- 90.5 teaspoon salt(3g)
- 100.75 cup raisins(120g)
- 112 cup corn flour (pre-soaked)(240g)
Instructions
- 1Preheat the oven to 350°F (175°C).
- 2In a large pot, add 1 cup of milk, cloves, and cinnamon stick. Bring to a gentle boil for a few minutes.
- 3Add evaporated milk, coconut milk, and butter. Stir until the butter melts completely over medium heat.
- 4Add vanilla extract, brown sugar, and salt. Stir to combine.
- 5Add raisins and pre-soaked corn flour. Mix well until smooth and combined.
- 6Pour the mixture into a greased baking pan.
- 7Bake for 1 hour at 350°F (175°C) until golden and set.
- 8Let cool before serving.
