- 11 bone-in spiral ham(4000g)
- 21.5 cup pineapple juice(360g)
- 30.5 cup brown sugar(110g)
- 40.5 cup honey(170g)
- 58 clove garlic, minced(32g)
- 61 tablespoon black pepper(7g)
- 71 teaspoon kosher salt(6g)
- 80.25 cup soy sauce(60g)
- 92 stick butter(226g)
- 1080 g garlic, minced(80g)
- 110.67 cup honey(227g)
- 121 tablespoon chili flakes(6g)
- 132 tablespoon soy sauce(30g)
- 142 teaspoon paprika(4g)
- 151 teaspoon kosher salt(6g)
Instructions
- 1Combine pineapple juice, brown sugar, honey, minced garlic, black pepper, kosher salt, and soy sauce in a large bowl. Mix until the sugar dissolves.
- 2Submerge the bone-in spiral ham in the brine. Cover and refrigerate overnight.
- 3Preheat the oven to 320°F (160°C). Remove ham from brine, place in a roasting pan, cover tightly with foil, and bake for 40 minutes.
- 4Remove foil, increase oven temperature to 400°F (200°C), and bake for an additional 15 minutes or until the surface is lightly caramelized.
- 5While ham bakes, melt 1 stick of butter in a pan over low heat. Add 80g minced garlic and cook gently for about 3 minutes until fragrant.
- 6Stir in chili flakes (optional), honey, soy sauce, paprika, and kosher salt. Mix well.
- 7Turn off the heat and add the remaining cold butter in slices. Stir until fully melted and the glaze is glossy and emulsified.
- 8When ham is done baking, generously brush or pour the honey garlic glaze over the entire ham.
- 9Slice and serve.
