Crispy Chicken Flautas (Taquitos)
Ingredients
- 12 chicken breast(500g)
- 21 teaspoon salt(6g)
- 30.5 teaspoon black pepper(1g)
- 41 teaspoon chili powder(2g)
- 53 tablespoon vegetable oil(42g)
- 61 onion, diced(120g)
- 71 jalapeno, diced(15g)
- 82 clove garlic, minced(6g)
- 92 cup chicken stock(480g)
- 101.5 cup shredded cheese(170g)
- 1112 corn tortillas(300g)
- 120.5 cup crema(120g)
- 130.25 cup cilantro(4g)
Instructions
- 1Season chicken breasts generously with salt, black pepper, and chili powder.
- 2Heat a pot over medium-high heat and add vegetable oil.
- 3Sear the chicken breasts on both sides until browned.
- 4Add diced onion, diced jalapeno, and minced garlic to the pot. Cook until onions are translucent.
- 5Pour in chicken stock and bring to a simmer.
- 6Simmer until the chicken is tender and easily shredded, about 20-25 minutes.
- 7Remove chicken and shred with two forks. Strain excess liquid from the mixture.
- 8Mix shredded chicken with shredded cheese.
- 9Spoon the filling onto corn tortillas and roll them tightly.
- 10Heat more oil in a skillet over medium heat. Shallow fry the rolled tortillas seam side down until golden brown and crispy on all sides.
- 11Remove flautas from oil and drain on paper towels.
- 12Serve hot with crema and chopped cilantro.
