Molten Lava Cake with Chocolate Ganache Center
Ingredients
- 10.5 cup dark chocolate(85g)
- 20.25 cup unsalted butter(57g)
- 30.5 cup granulated sugar(100g)
- 42 eggs(100g)
- 51 egg yolk(18g)
- 60.25 cup all-purpose flour(30g)
- 71 teaspoon vanilla extract(4g)
- 80.25 teaspoon salt(1.5g)
- 90.25 cup chocolate ganache (for center)(60g)
Instructions
- 1Preheat oven to 220°C (425°F). Grease 4 ramekins with butter and dust with cocoa powder.
- 2Melt dark chocolate and butter together in a heatproof bowl over simmering water or in the microwave until smooth.
- 3In a separate bowl, whisk together eggs, egg yolk, and sugar until thick and pale.
- 4Stir the melted chocolate mixture into the egg mixture.
- 5Add flour, vanilla extract, and salt. Mix until just combined.
- 6Fill each ramekin halfway with batter. Place a spoonful of chocolate ganache in the center, then cover with remaining batter.
- 7Bake for 10-12 minutes until the edges are set but the center is still soft.
- 8Let cakes cool for 1 minute, then invert onto plates and serve immediately.
