Ingredients

  • 10.5 cup dark chocolate(85g)
  • 20.25 cup unsalted butter(57g)
  • 30.5 cup granulated sugar(100g)
  • 42 eggs(100g)
  • 51 egg yolk(18g)
  • 60.25 cup all-purpose flour(30g)
  • 71 teaspoon vanilla extract(4g)
  • 80.25 teaspoon salt(1.5g)
  • 90.25 cup chocolate ganache (for center)(60g)

Instructions

  1. 1Preheat oven to 220°C (425°F). Grease 4 ramekins with butter and dust with cocoa powder.
  2. 2Melt dark chocolate and butter together in a heatproof bowl over simmering water or in the microwave until smooth.
  3. 3In a separate bowl, whisk together eggs, egg yolk, and sugar until thick and pale.
  4. 4Stir the melted chocolate mixture into the egg mixture.
  5. 5Add flour, vanilla extract, and salt. Mix until just combined.
  6. 6Fill each ramekin halfway with batter. Place a spoonful of chocolate ganache in the center, then cover with remaining batter.
  7. 7Bake for 10-12 minutes until the edges are set but the center is still soft.
  8. 8Let cakes cool for 1 minute, then invert onto plates and serve immediately.
