Ingredients

  • 1300 g cream cheese(300g)
  • 270 g blue cheese or gorgonzola(70g)
  • 3400 g mixed nuts(400g)
  • 4100 g dried cranberries(100g)
  • 510 g chives(10g)
  • 62 tablespoon honey(42g)

Instructions

  1. 1Chop the mixed nuts and dried cranberries.
  2. 2Finely chop the chives.
  3. 3In a bowl, mix the cream cheese with the blue cheese and chopped chives until smooth.
  4. 4Add about half of the chopped nuts and all the chopped cranberries to the cheese mixture. Mix well.
  5. 5Transfer the mixture onto a sheet of plastic wrap and shape it into a log.
  6. 6Wrap tightly and refrigerate for 30 minutes to firm up.
  7. 7Unwrap the cheese log and roll it in the remaining chopped nuts to coat the outside.
  8. 8Place on a serving platter and drizzle honey over the top before serving.
