Ingredients

  • 14 sweet potatoes(800g)
  • 22 cup cooked chicken breast(280g)
  • 30.5 cup buffalo sauce(120g)
  • 40.25 cup Greek yogurt(60g)
  • 52 green onions(20g)
  • 60.5 teaspoon salt(3g)
  • 70.25 teaspoon black pepper(1g)

Instructions

  1. 1Preheat oven to 400°F (200°C).
  2. 2Wash sweet potatoes and pierce them with a fork. Bake for 45-50 minutes until tender.
  3. 3While sweet potatoes are baking, shred the cooked chicken breast.
  4. 4In a bowl, mix shredded chicken with buffalo sauce, Greek yogurt, salt, and black pepper.
  5. 5Once sweet potatoes are cooked, let them cool slightly, then slice open lengthwise.
  6. 6Stuff each sweet potato with the buffalo chicken mixture.
  7. 7Top with chopped green onions and serve.
