Buffalo Chicken Stuffed Sweet Potatoes
Ingredients
- 14 sweet potatoes(800g)
- 22 cup cooked chicken breast(280g)
- 30.5 cup buffalo sauce(120g)
- 40.25 cup Greek yogurt(60g)
- 52 green onions(20g)
- 60.5 teaspoon salt(3g)
- 70.25 teaspoon black pepper(1g)
Instructions
- 1Preheat oven to 400°F (200°C).
- 2Wash sweet potatoes and pierce them with a fork. Bake for 45-50 minutes until tender.
- 3While sweet potatoes are baking, shred the cooked chicken breast.
- 4In a bowl, mix shredded chicken with buffalo sauce, Greek yogurt, salt, and black pepper.
- 5Once sweet potatoes are cooked, let them cool slightly, then slice open lengthwise.
- 6Stuff each sweet potato with the buffalo chicken mixture.
- 7Top with chopped green onions and serve.
