Ingredients

  • 11 rotisserie chicken, shredded(800g)
  • 20.5 cup Taco Bell chipotle sauce(120g)
  • 30.5 cup sour cream(120g)
  • 41 cup mozzarella cheese, shredded(113g)
  • 51 cup sharp cheddar cheese, shredded(113g)
  • 66 flour tortillas(360g)

Instructions

  1. 1Shred the rotisserie chicken and set aside.
  2. 2In a bowl, mix equal parts Taco Bell chipotle sauce and sour cream until well combined.
  3. 3Warm the tortillas in the microwave for about 1 minute, covered with a paper towel.
  4. 4Spread a generous amount of the chipotle-sour cream sauce over one side of each tortilla.
  5. 5Sprinkle mozzarella cheese and sharp cheddar cheese on one half of each tortilla.
  6. 6Add a layer of shredded chicken over the cheese.
  7. 7Top the chicken with more mozzarella and cheddar cheese.
  8. 8Fold the tortillas in half to enclose the filling.
  9. 9Heat a skillet or pan over medium heat.
  10. 10Place the folded quesadillas in the pan and cook until golden brown and the cheese is melted, about 2-3 minutes per side.
