Copycat Taco Bell Chicken Quesadilla
Ingredients
- 11 rotisserie chicken, shredded(800g)
- 20.5 cup Taco Bell chipotle sauce(120g)
- 30.5 cup sour cream(120g)
- 41 cup mozzarella cheese, shredded(113g)
- 51 cup sharp cheddar cheese, shredded(113g)
- 66 flour tortillas(360g)
Instructions
- 1Shred the rotisserie chicken and set aside.
- 2In a bowl, mix equal parts Taco Bell chipotle sauce and sour cream until well combined.
- 3Warm the tortillas in the microwave for about 1 minute, covered with a paper towel.
- 4Spread a generous amount of the chipotle-sour cream sauce over one side of each tortilla.
- 5Sprinkle mozzarella cheese and sharp cheddar cheese on one half of each tortilla.
- 6Add a layer of shredded chicken over the cheese.
- 7Top the chicken with more mozzarella and cheddar cheese.
- 8Fold the tortillas in half to enclose the filling.
- 9Heat a skillet or pan over medium heat.
- 10Place the folded quesadillas in the pan and cook until golden brown and the cheese is melted, about 2-3 minutes per side.
- 11Remove from the pan, slice, and serve hot.
