Ingredients

  • 16 egg(300g)
  • 21 cup boiling water(240g)
  • 32 tablespoon fresh herbs(8g)

Instructions

  1. 1Crack 4 eggs into a bowl.
  2. 2Quickly add 1 cup of boiling water to the eggs, stirring to combine, being careful not to cook the eggs.
  3. 3Strain the egg mixture to remove bubbles.
  4. 4Pour the strained mixture into a heatproof dish.
  5. 5Place the dish in a steamer and steam until the eggs are set (about 10-12 minutes).
  6. 6Crack 2 additional eggs on top of the set steamed eggs.
  7. 7Steam again until the top eggs are cooked to your liking, with jammy yolks (about 5-7 minutes).
  8. 8Remove from the steamer and top with fresh herbs, or enjoy as is.
