- 16 egg(300g)
- 21 cup boiling water(240g)
- 32 tablespoon fresh herbs(8g)
Instructions
- 1Crack 4 eggs into a bowl.
- 2Quickly add 1 cup of boiling water to the eggs, stirring to combine, being careful not to cook the eggs.
- 3Strain the egg mixture to remove bubbles.
- 4Pour the strained mixture into a heatproof dish.
- 5Place the dish in a steamer and steam until the eggs are set (about 10-12 minutes).
- 6Crack 2 additional eggs on top of the set steamed eggs.
- 7Steam again until the top eggs are cooked to your liking, with jammy yolks (about 5-7 minutes).
- 8Remove from the steamer and top with fresh herbs, or enjoy as is.
