Lattaiolo (Tuscan Milk Pudding)
Ingredients
- 1500 ml milk(510g)
- 23 eggs(150g)
- 3100 g sugar(100g)
- 41 teaspoon lemon zest(2g)
- 51 teaspoon vanilla extract(4g)
Instructions
- 1Preheat the oven to 160°C (320°F).
- 2In a bowl, whisk together the eggs and sugar until well combined.
- 3Add the milk, lemon zest, and vanilla extract. Mix thoroughly.
- 4Pour the mixture into a baking dish.
- 5Place the baking dish in a larger pan filled with hot water to create a bain-marie.
- 6Bake for about 40-45 minutes, or until the custard is set but still slightly wobbly in the center.
- 7Let cool to room temperature, then refrigerate for at least 2 hours before serving.
